I'm in LOVE with the Limber de COCO
Having just gotten back from sunny Puerto Rico, we couldn’t be more excited for this warm weather at home in Lancaster, Pa.
Warm weather means outdoor fun like camping, taking in the rays, music concerts and enjoying some nice cold treats like the Limber. In this post we’ll explain what a Limber is, how they originated, and how to make ‘em at home!

What’s a Limber?
/ˈlimbā/ noun: A refreshing Puerto Rican version of coconut flavored popsicles. Similar to coconut Italian ices. Traditionally served in a plastic or styrofoam cup (YUCK!), we’ve decided to use paper. (Keep it on the low though.) You won’t find a popsicle stick in this. No no!
Enjoy a limber by squeezing the cup so the limber pops up for you to suck on. Not a limber novice? Then you know to flip the limber upside down to enjoy from the bottom up.
Puerto Rico Limber History
Rumor has it that limbers got their name when Charles A. Lindbergh, who was flying across the Atlantic Ocean, was greeted with the frozen fruit ices during a stop in Puerto Rico. Locals claim that Lindbergh loved the frozen treats so much that they named them “limber” in his honor.
Limber’s are popular in a variety of flavors like coconut, pineapple, guava, tamarind, and mango.
Most recipes call for a blend of juice, water, and sugar. But we prefer ours with coconut milk and cream of coconut. Blend the ingredients and pour them into small containers. We use 5oz paper cups, but you can just as easily use an ice tray!

The Pop’d Shop’s Limber De Coco Recipe
What You’ll Need
1 can of Chaokoh Coconut Milk (1.7 cups)
1 bottle of Cream of Coconut (0.55 cups)
1/2 Cup Sweetened Shredded Coconut
2 teaspoons vanilla
1 teaspoon cinnamon
4 cup measuring container
Shake can of coconut milk to stir. Open and add to 4 cup measuring container. Use Cream of Coconut to bring measurement up to 2 and 1/4 cups of mix (about 0.55 cups). Add 1/2 cup of sweetened shredded coconut, 2 teaspoons vanilla, 1 teaspoon cinnamon. Blend/stir/mix. Pour into cups and freeze!
